General updates to dependencies/Velocity 1.1.0 update #169

I've updated a few dependencies throughout the project while also updating it to Velocity 1.1.0. This is not backwards compatible with Velocity 1.0.0, which isn't supported anymore.

I've also increase the plugin version to 12.1.0.

Hey buddy, please see #183 and comment if I've missed anything. I get the impression that the Tebex team aren't too active here considering you posted this last year.
