fix(ansible): Refactored ansible steps to now install metallb in post… #58

This fixes https://github.com/techno-tim/k3s-ansible/issues/56

Proposed Changes

reworked ansible steps to now have a post task where non essential services are installed and configured
properly wait and verify each task completed
clean up essential and non essential manifests
rename and refactor some manifests / templates
