More featureful defaults #19

To enable the best experience with minimum configuration, it may be worth thinking about turning more features on by default.

Two in particular that come to mind for consideration are:

org-latex-preview-auto-mode: I'm not in favor of this. A majority of Org users are not opening Org buffers to write latex in. Or perhaps a better way to put it: Most Org buffers are not opened with the intent to contain LaTeX. Burdening all of them with the various checks this requires in hooks (pre- and post-command-hook, and the hot-loop after-change-functions code) seems like a bad idea.

Undecided on numbering for now.

Hmmm, I think that's a good point around auto-mode.

Thinking more on numbering, I'm leaning towards "yes".

Let's wait and see the effect of numbering on live-previews. If I can easily freeze numbering updates when live-previewing, it might be worth turning on numbering.

Note that we (obviously) won't turn on live-previews by default -- but someone who tries live-previews with the default settings might conclude that they're too slow/laggy to be useful without realizing that only the renumbering is bottlenecking it.
