bump: Rails version of the example app #89

This just keeps our example app up to date with the most recent bump. Also, using this to continue the conversation in #88 and to better understand how we can extend our example application to better track with changes.

Hey Daniel, thanks for this. After digging in I decided to move more stuff around and update all the deps throughout while also moving the repo to GitHub actions, so I think that obviates this PR.

Still, can't reproduce the issue in #90 just yet. Probably need to run the example app with postgres, I imagine
