I stumbled across something that I was wondering whether I am overcomplicating life for myself.
Looking for a way to show the "from $Sitename" subheader that some wikis use underneath the H1 of a site main header, it seems it is display:none together with a few other elements, making it a bit tricky to unhide it because in the CSS it's lumped in with a few other ones, it's the #siteSub class.
The other aspect of the core content I wanted to show are the Categories of a page. These seem to be hidden by default also. Which begs the question: maybe either the how-to or config tutorial needs an update for showing and tweaking the most commonly used interface items, or maybe they need config variables to "undo" the default hiding behavior?
