Minor keycodes refactor that should have gone in with VIA Protocol 12 but didn't because I'm a drongo #133

Remove the WT lighting keycodes for V3 definitions, these are now the same as custom keycodes. V2 definitions continue to use the legacy keycodes and lighting menu.

This pairs with https://github.com/the-via/keyboards/pull/1727 which adds custom keycodes to the V3 definitions that use WT lighting.

Filter/group keycodes in the menu by new prop id instead of using label - allows both lighting categories to have Lighting label.

Tweaked the names a bit.

Removed unused Mod+_ menu.
