past proxies, datastores, big refactoring

Added dropdown that's enabled when we have past proxies. ThemeMode and past proxies are stored in datastores now.

big refactoring refers to:

moving stuff from :app that shouldn't be there to :core
splitting :core into :repository :core:common and :core:ui
migrating gradle to convention plugins and kotlin-dsl in general
simplification/correction of how proxy update classes are injected
discrete ui states in viewModel
full migration to material3 (initially to solve some problems w accessibility)
