Stand up ZOP with Persistent Storage #178

Stand up a ZOP stack but use persistent storage for the backing of the time series Prometheus data. Use ScaleIO as an example, but highlight that it could be any type of storage.

Started work on this... need to look into configuring ScaleIO on my k8s cluster.

Figured out how to configure and use ScaleIO volumes on Kubernetes...
