A very interesting extension to Sphinx that has been used a lot by other projects is Sphinx-Gallery
We have been using Notebooks, so far, for examples, which are nice too, but galleries provide a much better integration with the rest of the documentation.
We can start small and slowly add new example scripts to our gallery.
