Update readme for pilot scope #18

This PR updates the readme to remove parts that are outside the scope of the current pilot. There are also some text updates to make things clearer.

I've made a few more edits, specifically with the aim of improving readability. Previously the README was an imposing wall of text. I have broken optional/additional sections out into their own .md files which should allow for a more structured reading experience.
