next: replace deprecated json dependency

What it does

Fixes: #379

The following pull-request replaces the deprecated @theia/json dependency from the next images, with the vscode builtin counterpart `vscode-builtin-language-features:

removes the dependency from the next images
adds the builtin dependency for json
removes the unused resolutions

How to test

verify the CI passes
verify that the json language features work correctly (ex: editing the settings.json)
