Setup Documents subdirectories under UI #216

This pull request is associated with issue #215. Setup Documents subdirectories under ui/components, containers & pages. This helps when extending base for your own apps. You can duplicate these directories when extending the app in the same way as the existing api/documents directory.

Hi @rgstephens. I'm going to close this one out as I'd like to keep the component names matching the file names.
