Bump version to the last mongoid release 5.0.0.beta

Really appreciate this pull request! I'm planning to hold off updating the gem for Mongoid 5 until after the final release is out, however. Thanks though!

Thanks again for this PR, I merged an update a while ago that brought the library up to Mongood 5.0.0. I'll close this now, but feel free to comment or reopen if there's any concerns 😀
