Updated the Homebrew script again, this time using the latest version of VTK (9.2 as of writing this) instead of the deprecated version 8.2 that won't install. Also updated the install instructions to add a macOS section.

I've tested this on Intel and M1 Pro Macs and it now installs and runs properly. Should fix #8
