Remove windows and mac from workflow #8

As mentioned here toolboxes are not currently supported from Github hosted workflows on mac and windows. Removing workflows to have passing test.

This PR also sneakily tests against past versions of matlab

Looks good. This should help us verify compatibility with at least R2020a.
