I'm assuming it is still Preferences in the Menu bar on macOS. See https://bugzilla.mozilla.org/show_bug.cgi?id=1698550#c2. A decision was made by Joni, the previous SuMo Content Manager, to use Firefox application menu instructions for Windows/Linux and Menu bar instructions for macOS. See https://support.mozilla.org/en-US/kb/Template:optionspreferences/discuss/9660 Use Menu bar instructions for mac (bug 1698550)
Apparently, macOS now shows Settings instead of Preferences in the Menu bar. I added a post with a screenshot from Roland to https://support.mozilla.org/en-US/kb/Template:optionspreferences/discuss/9660
Does Settings vs Preferences in the macOS menu bar depend on the OS version? It appears to still be "Preferences" on Big Sur. See this post: https://support.mozilla.org/en-US/kb/Template:optionspreferences/discuss/9660#post-26354

I asked an Italian friend who uses a newer version of macOS and in the Firefox menu bar the item is "Impostazioni…" = "Settings...", so maybe the item in the macOS menu bar depends on the version of macOS. But if so, I don't understand why on Thunderbird 115.3.1 in macOS Big Sur 11.7.10 the item is Settings. Who decides what the item in the macOS menu bar should be? Apple or the developers of the Firefox and Thunderbird apps?

@michrogit i have no idea :-) ask in #maildev on Matrix ? or other developer channel :-) ?!?!?!? I assume it's Firefox and Thunderbird software developers since FF and TB are different. If it was up to Apple then FF and TB would be identical right?
For the record here's a table of the situation I have observed in my testing | version | menubar | hamburger aka ≡ menu |
---|---|---|---|
older versions of macOS e.g. Big Sur | Firefox: Preferences TB: Settings |
Firefox: Settings TB: Settings |
|
newer versions of macOS | Firefox: Settings TB: Settings |
Firefox: Settings TB: Settings |
Firefox 123.0 | Thunderbird 115.7.0 |
---|---|

@michrogit Mike Kaply in Matrix confirmed that Firefox and Thunderbird developer determine this, not Apple.
If this was done by Mozilla then it was probably due to a macOS change. I found this posted on apple's discussion forum, after a web search: https://discussions.apple.com/thread/254314315 (quote) Breaking News: Preferences Are Now Settings
With the advent of Ventura System Preferences and now called System Settings. In fact all preferences for Apple apps are renamed settings. This is to make Mac and iPhone more similar in their interfaces.
P.S. Another reference, from https://www.wikihow.com/Change-Your-General-Preferences-on-Safari
Click the "Safari" menu and select Preferences/Settings. If you're using macOS Ventura (13) or newer, you'll see "Settings." If you're using macOS Monterey (12) and older, you'll see "Preferences."

Wow! Amazing find, thanks Aice!
Related Firefox bug: Bug 1399502 - [meta] Change remaining "Options" and "Preferences" references to "Settings" (including URL)
This is the case for Thunderbird and Firefox but we'll only worry about Thunderbird here :-) obviously
See #SUMO message 1 and message 2
See also wiki page: "Settings" on macOS, Windows and Linux (not "Preferences" on macOS any more)
[ ] Make a list of all articles that use https://support.mozilla.org/en-US/kb/templateoptionspreferences aka
Template:optionspreferences TB
<-- This list should be easy to get from the google kb article audit Sheet: Thunderbird KB Audit Version 2 and also from the API just search for all articles with[[T:optionspreferences TB]]
[ ] change the template to state it's
Settings
on macOS on Thunderbird in the menubar and in the hamburger menu[ ] Replace all references to the template with Click {menu ≡} > {menu Settings} No need for a template. No need for a reference to menu bar since everything is done from the hamburger.
[ ] Delete the template because it references the menu bar and is no longer needed after replacing all the references.
Screenshot from Firefox 122 macOS Ventura latest, it's the same for Thunderbird on macOS
