Organizer - An organizer of an academic event or event series.

The definition should clarify if aeon:organizer includes persons and/or organisations.

The definition you pasted here is not the one stated in the recent AEON version:

definition An organizer is a contributer that holds an organizing role which is being realized in a planned process. elucidation A person or organization that is responsible for the planning and realization of a planned process.

You took the definition of the ConfIDent schema, which is not as precise yet. Any improvement tips for this need to be filed in its repo under https://github.com/TIBHannover/ConfIDent_schema/issues, please. ;)
