Anything I can help or modify to have this integrated (so I can move https://github.com/rstudio/vetiver-r/pull/124 to Ready-for-review)?

I'm not able to run torch models for interactive debugging; let's wait until we have M1 support for torch installation.

I am now able to fit torch models on an M1 🎉 so the next steps before getting this merged in are to address mlverse/tabnet#109 and mlverse/tabnet#110.
