Multiple fixes to get the slides to render #131

Unfortunately, the slides on the main branch no longer render. As I was preparing to teach my class with it, I fixed the issues one by one, mostly dealing with package incompatibilities and such. This pull request consists of the necessary fixes to get all units and topic presentations to render properly without errors.

Thank you so much! I made a few other updates to the slides so didn't directly merge this but incorporated some of your suggestions as well.
