Does this mean that only ONE relay can be systematically associated with that DoOH? What if multiple relays are enabled in a network?

Good catch. DoOH server can use multiple relays. Fixed text. I don't get the last question, clients don't use relays provided the network. Client uses pre-configured relays to communicate with the discovered DoOH server.
