Ech proposed definitions

This is a first attempt to propose some definitions.

There are indeed a number of problems in the document.

• Some terms are inconsistently used, e.g. 'provider', 'ECH-service provider', 'client-facing' server. So I tried to fix that a little bit in the text. I think that the concept of 'provider' is actually good and is so indirectly understood, I wonder if there shouldn't be a bit more text to develop this good concept.
• Some terms are abused e.g. 'public name' and 'public_name'. In addition on this one if you come the first time to this text, the immediate thinking is 'public name of what?'. So I understand why this term in the context of this text and understand it would be heavy to precise the 'public name of the origin server client-facing role' but still. Would be happy to discuss how we can make it a bit more explicit if at all possible.

I am wondering if there are other terms that we should define too here but let's propose this first change.
