Adding instrumentation (traces only) to main service

fixed a crash when booting
Adding configuration to the main service via dotenv
Adding automatic OTL instrumentation for nodejs
Adding configuration for both Console and OTL Collector exporters (mutually exclusive when running)
Adding nodemon for easier development

Includes fixes from fix-productcatalog-example-component

This contribution looks good to me. It adds Open-Telemetry to the example component (in addition to the existing Open-Metrics interface). I have tested it independently and am happy to approve. As this is more than a fix/documentation contribution, I'll present and approve (if no objections) after the Thursday project meeting.

I have tested this Open telemetry implementation addition to the product catalog component reference implementation on a minikube K8s cluster. Good contribution! Screenshot 2023-11-28 at 16 29 39
