Canvas: Observability service following OpenTelemetry standard #220

Is there already a requirement that the observability service of the canvas shall follow the OpenTelemetry standard? @sigiDT , we were able demonstrate in Vodafone that the canvas observability service supports the Open Telemetry standard. However, we used Datadog as the observability platform. So I am sure this should be possible for Prometheus as well.
