The constants currently specify to use 1.2022.4

https://hub.docker.com/r/plantuml/plantuml/tags has 1.2024.6

And jars can be fetched from github releases https://github.com/plantuml/plantuml/releases e.g. https://github.com/plantuml/plantuml/releases/tag/v1.2024.6
