Cleanup after deploying MIRAv2

Once we deploy and wire up MIRAv2 (see: https://github.com/tnc-ca-geo/animl-api/issues/93), we should:

• [x] shut down the two real-time endpoints currently hosting MIRAv1
• [x] tear down the MIRA API stack as it's no longer needed
• [ ] possibly remove or archive that code?
