not having synesthesia in 2019
I think the wording is fine as-is! In fact I find the synaesthetic metaphor quite pretty. What alternative would you propose?
‘Pays attention to the taste of’ sounds neutral and would fit with the other –sī compounds (‘pay attention to the smell’, etc.). I like the metaphor too, but I don't think it should stay in the dictionary and flabbergast its readers :)

"savour" would also work
‘Listens to the taste’‽ Is synaesthesia required to speak Toaq? For real, though, I'd consider rewording the definition.
