I just added the new Echo Show 8 3rd generation and Echo Speaks does not seem to work with it. I checked the Echo Speaks app homepage installed on my Hubitat and it lists the new Echo Show 8 as one of the online devices. Echo Speaks is working fine will my other ten Echo devices. During testing, I went to the Hubitat device page for the Echo Show 8 to send sample text statements to the new Echo Show 8 and it remained silent and a log was generated reporting that Echo Show 8 is not supported (show below). However, if you select the "Say goodbye" or "good morning" function buttons the new Echo Show 8 speaks the greeting. It seems to not be able to reproduce custom text to speech.
