nyxrc.sample: specify defaults inline #46

This allows the user to simply copy the config and start Nyx. Prior to this commit, Nyx won't start in that case, because some of the settings had placeholders instead of their actual defaults.

Thanks for merging! I expected some pushback. If I knew you'll just accept all these changes, I would have made a single PR. Sorry about the extra work I created :)
