Bump versions of symfony packages to ^3.4 #16

Just submitting for tests as I consider adding this to https://github.com/opendevshop/devshop

Superceded by #21, which updates to Symfony 2.8 => 3.4 => 4.4 (and includes various fixes to work on the newer Symfony versions).

There are some merge-conflicts because of other dependency changes.

I notice that this branch includes an update to define git scan ls --depth=X. That does seem like a useful feature :+1:, but it's a different scope from the PR subject, and it would make sense to include the same option in most (all) subcommands (eg git scan status, git scan foreach). So if you (or anyone) ever gets the urge to continue implementing that, feel free to open as a distinct PR.
