Source compatibility for JVM 1.8 #370

JVM source compatibility was changed to 17 here. But this doesn't seem to be required. Reverting to 1.8 compatibility supports more apps that target JVM <17.

CI is having weird issues, but I ran locally and it seems good. Merging and then pushing a release. Thanks!
