Add `macOS` arm to `CI` #49

Even though the claim is that it's arm, kotlin is still building x86_64 and skipping all Arm tests.

So, it is not a viable solution.

Will leave this open for the time being in case something changes, but most likely will never use and need to come up with some other solution.
