Better tracking for Uniswap v3 price estimation

• Currently estimate_sell_received_amount (and co) return raw amount

To track the slippage better, we should also return

• Block number
• Mid-price at the time of the reading

This allows us to post-mortem diagnose why slippage tolerance was exceeded
