Couple of notes:

Some of the stuff touched here is currently managed by the https://github.com/transition-zero/tz-cookiecutter-pypackage repo. We might want to have a wider conversation about whether to migrate the templates to poetry.

Also note that we're using setuptools-scm to manage versions, so version numbers should not appear in the pyproject.toml.
