Update build dependencies #83

Complained about updating detekt and kotlin too

Given that AGP7 (just hit beta channel) requires java 11, if the java 8 setup is causing issues, feel free to just remove it from the matrix.

Thank you for checking. I though I'm okay with Gradle but this project setup is challenging all knowledge I got. 😅 Somehow I see different results running locally and on a CI (trust CI more).

Paused at Gradle 7 which didn't work due to promoted to error warning
