That is a cool idea but I probably don't have the spare bandwidth to implement it myself. However I'd welcome a patch that does so.

This plugin and that plugin are both GPLv3 so with proper attribution can mix-and-match code as necessary. Not sure where the graphics code in pinyin-toolkit
is though and whether recent versions of Anki still support it.
If you haven't already you may also want to check the "Chinese Support Redux" plugin which at least will give you a plot of the total number of Chinese characters you have learned over time even if it isn't broken by category:
Is there any chance that you could implement some simple graphics like the old hanzi graph of the pinyin toolkit:
