Where is it described how to setup a new topic and its configuration?

Network policies when setting up access to Kafka - developers can/should do this completely?

Where is it described how to setup a new topic and its configuration?

MNR: Since this differs dramatically between local development (in docker compose) and in-cluster, I think we should have separate, clearly distinct sections describing this. I do however think that the way that topic setup and configuration works in the Kamstrup cluster should not be described in the general documentation, but rather in a different, Kamstrup-specific place, since it is so heavily dependent on the cluster setup.
