Updating API v1 doc with the new fields that were added for T4TMC

Oops, I did a force push to keep the commit history clean (which it did), however lost the comments on the original pull request in the process.

The only outstanding comment was: Explain how bookingsite* fields differ from supplier* and agency* fields.

My response to that comment was: we are already using appropriate example response data to differentiate the 3. agency_* fields have Adelman Inc data, while bookingsite* has Expedia

I am not sure if this should be the document to explain the business use-cases of each of the 3 kinds of field blocks
