Switch default network name in documentation from laika to tlbc #593

The current documentation of the README focus on the Laika test network. There was already the question on Reddit if Laika is the name of the main network. We should convert it to focus on the Trustlines Blockchain (tlbc) and add some notes how to switch to Laika.
