fix: replace clipboard module #202

I know that this is an old PR, but it would still be useful to merge it in. For reference this clipboard module was renamed in February 2021, and so you would not be receiving any updates from the library https://github.com/react-native-clipboard/clipboard/releases/tag/v1.6.0
