[X] I have read the current limitations, and confirmed that this hasn't been requested as a feature request previously.

Is it possible to change the placement of YouTube IDs to the bottom of the description so that it looks nicer in Plex?

Acknowledged. This should be feasible to move it. I'll consider it for one of the next releases.
