Feat: Add ethers-adapter #100

This PR adds the Ethers.js adapter hooks useEthersProvider and useEthersSigner. These hooks allow access to the Ethers.js Provider and Signer objects. They are meant to be used only with third-party libraries and SDKs that only support ethers. The hooks are based on the Wagmi Ethers adapter documentation.
