For 1:1 chats, allow users to set avatars and names for people. This would be done in the admin room.
When in a 1:1 with a phone number: If the matrix user changes the room name/avatar, copy those settings to the virtual user only in that room
When in a MUC, allow the virtual user to control their name/avatar using commands. Ie: NAME Travis Ralston or an MMS with the caption AVATAR.
