I also miss an option to set a specific DNS server for browsing.
In the meantime, you could contemplate the use of AdGuard app. Although it's a freemium software, among its free features it has the "DNS protection" which acts as a VPN enrouter. With that shield activated you can set the DNS server of your choice. For example, you could use "AdGuard DNS for family" protection, or "Cloudfare for families". They both block adult content.
Also, you can set AdGuard DNS Filters to work only with the apps of your choice (i.e., white listing), so that you can only filter Via Browser app and not the rest of apps you use.

I can use cleanbrowsing dns with chrome and other browsers inorder to block inappropriate content for kids. But Via doesn't offer the feature to adjust dns, and the FAQ is merely complete...
