Shouldn't we update the changelog as well? Changing [Unreleased] to [2.0.0]?

Actually, it depends what this PR should be for. I was thinking we could already merge it today, but that wouldn't make it the version 2 release per se. Alternatively, we could transform this PR into a big one that prepares everything for v2
