Upgrade to latest haskell.nix and ghc #21

A bug we previously experienced has been resolved.

This updates the used GHC version to 8.10.7

CI failures should be resolvable by updating the versions used in https://github.com/tweag/haskell-fido2/blob/d4f8658710b223531c2c6786184eb78b3592af27/.github/workflows/build.yml#L15-L16
