Set .sh files to use LF line ending #227

I don't know why this was not a thing already? .sh files will sometimes not work because they have the endings replaced with CRLF. I don't know why anyone would want that.

Good, put it in .editorconfig too!

I'm not sure what this is. Maybe it should be put in a issue? Doesn't seem productive for me to add a new file for just this. For now.
