Various fixes relating to getting started with one of the demos:

changed the xarray dependency version which was breaking the downloading of data (no test coverage for this).
updated documentation as per #23 to create an idiot-proof method for getting started with the demos.
removed some old redundant files (resolves #21)
created a function for saving of animations in the plot module
