Add additional context to demographics section? #673

People who have worked with similar data might be surprised when they see this because they can't instantly assess the methodology or some of the top-level considerations with this dataset. Could we add more context to make the data more approachable?

Concrete example: "Uninsured" as a category has a lot of nuance (Covered by medicaid, medicare, or other "state" coverage? "Adequate" or not?"). How can we communicate that there is nuance here, but make the initial view of the numbers approachable? without many words

If we include definitions of the terms / categories / etc, there will a lot of text. Even if we use footnote-style annotation and show that text at the bottom of the page. It's just going to be a lot of words to describe what each category means, and we'd probably need to describe every single category (because why would we define "uninsured" but not "heart disease", for example?)

I think we'd need to link out to a separate page. Something as simple as "Click here for data defintions and more information" which opens a new page with all that jazz.
