Get `pointblank` table to render with `targets` #21

Describe the bug In pr #18 there is a Quarto document with a pointblank table in it that I can't get to render. Opened an issue in pointblank (https://github.com/rich-iannone/pointblank/issues/448), but might need to figure out a workaround for the time being.

had to update gt to latest CRAN version and pointblank to dev version.
