Replace university logos by grey versions (except U of A Library)

Moved this to a new issue from #23, in part to raise a possible concern for discussion:

The universities themselves may not want their colour schemes changed, and might even explicitly ask that they only be used with specific colours or as-provided.

@CarlsoFiorention do you have thoughts on this? alternative idea re: logos?

I suggest to leave them in color for now, most logos have a monochromatic version, but they may also request the color version whenever is possible
